Vegan Spanish Omelette/Tortilla. In my pre-vegan days, Spanish Tortilla was a favourite comfort food of mine, but I love this vegan version even more. Not only is it delicious, it's cruelty-free (no hens or chicks are harmed in the making of this omelette) AND healthier than the traditional version. Our simple vegan take on the traditional Spanish omellete or tortilla using chickpea flower and replacing eggs with our own vegan mix.

Pour the mixture into a pan and bring to boil while constantly stirring. Tortilla (or Spanish Omelette) is a typical Spanish recipe, probably one of the most famous in our country.   5. Place a plate over the frying pan and flip it over and turn the tortilla around and cook the other side for 6 minutes. If required, keep turning it around till it's properly cooked. Take it off the frying pan and serve hot..

Many of them don't like calling this dish an omelette at all. Spanish Tortilla is made with surprisingly few ingredients. Just eggs, potato, onions and olive oil. Though you'll find many variations around, even I made this Spanish Omelette as part of a Spanish Fiesta extravaganza, as part of the Easy Tapas spread to start the meal.
