Heat the oil in a large, deep pan or casserole dish over a medium heat and add the onion, celery and chilli. Using ground turkey, canned kidney beans, and plenty of seasonings gives this simple and surprisingly light chili plenty of flavor. This chili was perfect for a cold night.   1. Heat 1 tbsp oil and add the turkey. Cook on a medium high heat until starting to brown..

I didn't mash the kidney beans and added a can of black beans and corn. Great for batch cooking as the flavour enhances on a reheat. I use frozen veg too, which makes this an incredibly cheap but nutritious meal.
