This South Indian tomato rice recipe is inspired by the tomato rice we would often have at the cafe at Isha Yoga Center, Coimbatore, India. Both their mushroom rice and tomato rice were a hit with us. I did manage to replicate the mushroom rice at home and now it is our favorite dish.
